For my FB friends who were waiting on my Mongolian Beef recipe! You won’t believe how easy this is!

Mongolian Beef

Ingredients:
Rice (I made 2 servings of Minute Rice)
Flank Steak (8 oz) sliced thinly against the grain
1/4 cup Soy Sauce
1/4 cup Brown Sugar
1/3 cup water
1 tbs Ground Ginger
2 tsp Crushed Garlic
Corn Starch
Broccoli
Chopped Green Onions (optional)

Note: Measurements may not be exact. I tasted as it cooked and added soy/sugar to taste.

Prepare Rice according to package directions. Steam broccoli until just tender.
In zip lock bag, coat flank steak with corn starch, then shake off excess and fry until cooked through. Remove from pan and set aside. 
In same pan heat ginger and garlic just til heated.
Add soy sauce, brown sugar, water, and cooked meat. Simmer until sauce reaches desired thickness. Add cooked broccoli and green onions. Stir to coat.
Serve over rice.
Enjoy!

BBQ chicken

CIngredients:
Chicken
BBQ sauce
Cheddar cheese
Bacon :-) (cooked)

Coat chicken in BBQ sauce. Place on a cooling rack on a baking sheet (as pictured). Bake at 350° for 20-30 minutes or until cooked through. Add about 1 Tbs. BBQ sauce to the top of each chicken breast. Cover with cheese and cooked bacon slices. Heat in oven until cheese is melted. Yummy!

Sunday Crockpot Nachos

Ingredients:
Beef
Taco seasoning
Velveeta
Nacho chips

Put meat in small crockpot. Sprinkle packet of taco seasoning over meat. Cover in water and cook on high for 2-3 hours. (Perfect for Sunday lunch) when cooked through, remove from crockpot, shred, and return to crockpot and stir. (There should still be water left) While it’s heating through, melt Velveeta with some milk. Once it’s melted, layer chips, meat, and cheese! It’s super easy and yummy! :-)

Earlier today, my mom asked me if I had any good chicken recipes, and since I was planning on posying this recipe soon, I decided to go ahead and share this recipe. This is an easy chicken dinner that I found on a Good Seasons Italian dressing mix packet a few years ago, but I can’t find it on the packets any more. This is one of my go-to recipes that my husband likes! It’s easy and yummy! Try it and see for yourself!

EASY Parmesan Gatlic Chicken (serves 6-about 175 callories each)

Ingredients:
1/2 cup Parmesan Cheese
1 envelope Good Seasons Italian Dressing & recipe mix
1/2 tsp. Garlic Powder
3 Boneless, skinless Chicken Breasts, halved

Mix cheese, garlic powder, and Italian dressing mix in bowl. Coat chicken with cheese mixture and place in baking dish. Bake at 400° for 20-25 min. or until cooked through. Serve and enjoy!

As you can see, I served mine with pasta salad and green beans… yummy!

Remember in my HASH post how I said some things were expected, like good food? :-) Well, we had pasta on a weekly basis. One of our favorite forms of pasta was LASAGNA! Don’t tell me you don’t know how to make LASAGNA… nobody does… until now! :-)

LASAGNA

Ingredients:
Lasagna noodles
Pasta sauce (I suggest pre go, but since all I had was DelMonte, I added the Lawry’s season mix) make sure it’s a good sauce since the flavor intensifies.
Shredded cheese
Cottage cheese

1. Cook noodles according to package directions. Drain and rinse in cold water.
2. Spread a thin layer of sauce on bottom of baking dish.
3. Layer noodles, cottage cheese, sauce, and sauce until dish is filled.
4. Top with noodles covered in sauce.
5. Bake in 350° oven for one hour.
6. Let cool for 15 min. Before cutting and serving.


It’s kinda runny when it’s still hot, but firms up as it sets… if you can wait any longer for it… we never can :-)

I love lasagna! Now you can make it for me :-) I served mine with a light Italian salad. I counted calories and it fits in the diet! YAY!

Flank Steak

Salt and pepper the flank steak. Heat oil in a large, ovenproof skillet over high heat. Cook for 2 minutes per side. Transfer to the oven and cook 6 to 8 minutes for medium-rare steak. Leave in oven for a few more minutes for more well-done steak. Transfer to a cutting board. Let rest for a few minutes before slicing.

I served mine with a somewhat fail attempt at sweet potato “fries” and low fat Caesar salad. It was yummy… will make this again soon.

Note: the price of flank steak is a bit high, but after dividing an $11 steak into portions, there was enough to make 3 meals serving two each… not too bad when you think about it… next time, I think I’ll try my mom’s flank steak sandwiches-it’s like homemade Panera… :-)

Pot Roast

Ingredients:
Roast (I use whatever’s cheapest) :-)
Potatoes-whole, peeled
Baby carrots
Onion soup mix

Put all ingredients in crock pot. Cover with water. (This can be done the night before and put in the fridge. Just be sure the potatoes are covered in water.) Cook on high about 4 hours or until vegetables are tender and meat cooked through.

This is a great Sunday lunch. Put it on before you leave for church, and lunch will be ready when you get home… be sure to make a lot extra, you’ll want leftovers!

Did I say LEFTOVERS?! That’s almost a “bad word” to my husband’s family… but don’t worry, he loves what I can do with Roast leftovers! Start with Roast sandwiches but make sure you have enough leftovers to make Hash! Don’t worry, I’ll tell you how to make HASH later… the important thing is that this will be a multi-task meal, so make a lot! :-)

Cheese Quesadillas

Ingredients:
Cheese
Tortillas

I have a quesadilla maker, but before I had a quesadilla maker, I used a plain ol’ frying pan. :-) you can use either.

1. Place one tortilla in bottom of pan/quesadilla maker. (If using a pan, you may wish to spray the outside of tortilla with cooking spray to help it brown.)
2. Cover tortilla with cheese. (Leave about an inch around the edge for cheese to spread.)
3. Cover with one more tortilla.
4. If using quesadilla maker, just close it up and wait til you get the signal it’s done. :-) If using a pan, cook over med-low heat until browned on one side then carefully flip. Cook on other side until golden brown and cheese is melted.

I served mine with chips and salsa. I posted a link to the Chili’s copycat salsa I used.

Easy French Dips

Ingredients:
Deli rolls
Roast Beef
Au jus mix

1. Prepare Au just mix according to package directions.
2. When Au just mix is prepared, dip Roast Beef in jus and assemble sandwich. Serve with remaining Au jus.

Tip: These sandwiches are also good with sauteed onions and/or with the deli roll toasted with cheese.

Deuteronomy 8:10 When thou hast eaten and art full, then thou shalt bless the LORD thy God for the good land which he hath given thee.

These are the diet Chicken Enchiladas I made the other day. Who said diets can’t be tasty?! :-)

CHICKEN ENCHILADAS

Ingredients:
1 1/2 lbs. Chicken breasts
1 tsp. Cumin
2 tsp. Minced garlic
1 chopped onion
1 jalapeno, seeded and minced (I left this out)
1 can refried beans ( I posted my recipe earlier)
8 Whole wheat tortillas
1 can enchilada sauce
1 cup low-fat cheddar cheese

1. Boil chicken about 20 minutes or until cooked through.
2. Saute onion, jalapeno, cumin, and garlic for about 3 minutes.
3. Shred chicken (I use my Kitchen Aid mixer for this part).
4. Mix shredded chicken, refried beans, and onion mixture together. (Still using my mixer)
5. Fill tortillas with mixture, place in baking dish, and cover in enchilada sauce and cheese.
6. Bake at 350° F for about 20 min. or until cheese is melted and enchiladad are heated through.

I served mine with chips and fresh tomato salsa/Pico de Gallo. Yummy! (I’ll post my recipe for that later)
